Quick and Easy Ice Cream Sandwhiches


My family love ice cream sandwiches! It is our all time favourite and often they will squabble over who ate the last one!

Buying enough for everyone can be costly and they are gone with in minutes!

Making them is easy and more cost effective. And if you run out it’s easy to make up another batch!

Ingredients 

Makes 12 ice cream sandwiches 

100 g vanilla ice approx 6 oversized tablespoons (use lactose free if needed)

1/2 cup choc chips (use lactose free if necessary)

24 round chocolate biscuits such as chocolate rough biscuits (use glutenfree if necessary)

Instructions 

  1. Place 100 g vanilla ice cream in medium size glass bowl, add 1/2 cup of choc chip. Mix thoroughly and quickly.
  2. Place 12 biscuits on a baking tray lined with baking paper and place a teaspoon is mixture and spread around the biscuit base. Top with other biscuit. Do the same with the other biscuits.
  3. Place finished sandwiches in the freezer for a minimum of 4 hours to set

For an extra treat spread Nutella on the base of each biscuit before topping with the ice cream mixture. Substitute the vanilla ice cream with your favourite flavour.
